To ensure that his spice rubs and cooking technique were authentic, Tazé’s chef wore a GoPro while hanging out with the street vendors of Marrakesh for a few days. The result: three sublimely spiced meats, all with authentic flavor profiles, roasted in the juice-sealing heat of an 800-degree tandoor oven.
