The Background
Katie, and her father, Tom Lee, opened the original Katie’s Pizza (6611 Clayton) in 2008. Five years later, with help from a successful Kickstarter campaign, she and husband Ted Collier opened Katie's Pizza & Pasta Osteria (9568 Manchester), specializing in modern interpretations of Italian cuisine with local and seasonal ingredients. In 2017, they opened a second location, at 14171 Clayton in Town & Country. Among their successful pandemic pivots was the launch of a line of frozen pizzas. And this spring, the couple will open a third restaurant in Ballpark Village, their largest restaurant location to date. Over the years, Katie's Pizza & Pasta Osteria and its namesake owner have won myriad accolades.
“Restaurant years are like dog years. Multiply by seven,” says Lee Collier. “It’s a tough business. We’ve been through many wins and even more struggles, and while it feels like a few lifetimes, it also feels like we are just getting started.”
Katie’s Pizza & Pasta Osteria is open from 11 a.m.–10 p.m. Sunday through Thursday and from 11 a.m.–11 p.m. Friday through Saturday. Visit the website for more information.
