It’s all about the beer. That’s an ad campaign for a different brand, but it should really be for Guinness, the dark, frothy brew that is thick enough to eat. Guinness inspires rabid fans who scoff at bars without the beer on tap, the only way these devotees will have it. On St. Patrick’s Day, even if you are not normally a dark beer fan, you owe it to yourself to have at least one pint. Some of these joints are more Irish than others, but a glass of the good stuff is a joy either way. Watch your bartender on the pour—properly done in two increments, the first to settle and the second to make the perfect “head.” Watch the tiny bubbles froth up to the surface, and then bottoms up.
