Stacked STL now open in the CWE

Over the past 13 years, Stacked STL has earned acclaim for its inventive approach to burgers, appetizers, hand-cut fries, and crafted cocktails.

The wait is finally over for burger lovers in the Central West End. Stacked STL (400 N. Euclid), the popular restaurant that originated in the Carondelet neighborhood, has officially opened its doors on the corner of Euclid and McPherson Avenues. The restaurant quietly opened to the public on September 17, promising the same creative burgers, fries, appetizers, and cocktails that have earned the brand raving fans over the past 13 years.

This is the second location for Stacked STL, which had been serving up its gourmet burgers since it first opened in Carondelet in 2012. Owned by husband and wife Matt and Laura Windisch and their business partner, Sam Siebenman, the restaurant has developed a loyal following over the years, thanks to its chef-driven menu of cooked-to-temperature, customizable burgers. In opening an additional spot in the Central West End, the partners hope to gain even more fans while breathing new life into the again-vibrant corner of the neighborhood.

“Everyone—both the people and the businesses in the neighborhood—have been very welcoming,” says Matt Windisch. “This used to be the corner in the Central West End, but a lot of things have happened over the years. When COVID got off people’s minds, the fire happened across the street, and then the tornado came through, which caused chaos. Everyone is just hoping to have some cool stuff stay around. In a neighborhood like this, it takes a lot of hands.”

Stacked STL will be open daily from 11 a.m.–10 p.m., with the exception of Tuesday, when it will open at 4 p.m. The bar will remain open every day until 11 p.m. Here’s what to know before you go.

The Space

Stacked STL occupies the prominent CWE space on the northeast corner of Euclid and McPherson that previously housed Pi Pizzeria.

Although the building’s footprint has not changed, the interior has been updated to reflect the new occupant’s branding. Walls are painted cream and adorned with burger-themed murals. The base of the wood-topped bar is now bright yellow, and a mix of black metal chairs and tables, orange fabric banquettes, and silver bar stools provide seating in the large dining room.

Currently, the restaurant is waiting on permits for outdoor sidewalk seating; Windisch anticipates it will be finalized within the next week.

The Menu

The new Stacked STL offers the exact same food menu as its original location. This means that guests can still get their iconic favorites, such as the barbecue brisket-covered Wet Nap burger, the fiery ghost pepper and jalapñno-topped Barn Burner, and the hearty vegetarian black bean burger, The Herbivore.

In addition to the composed offerings, guests can opt to craft their own burger from a comprehensive array of options, beginning with a choice of patty (for instance, chuck, salmon, chicken, or beef-pork) and a choice of bread (brioche, sourdough, or pretzel, to name a few). From there, the sky is the limit in terms of toppings, sauces, cheeses, and side dishes, which allows diners to create endless combinations.

September’s Burger of the Month: ground chuck, refreshing pineapple blood orange salsa, Hawaiian BBQ sauce, grilled spam, and pepper jack cheese, all on a soft Hawaiian bun.

The one food difference between the two locations is the Burger of the Month, which Windisch hopes will generate a friendly competition by seeing which specialty offering proves to be more popular.

The bar program is the one area where guests will notice the biggest difference between the Central West End and Carondelet locations. Although there will be significant consistency—both will offer the same specialty cocktails and have many of the same beer and wine labels—Windisch says to look for more expanded offerings in the new spot.

“This is a different neighborhood, so we want to try out stuff that we love,” says Windisch. “There are some whiskeys and wines that we have here that don’t really move in Carondelet, and we will continue to evolve our cocktails.”

The Backstory

After taking over their Carondelet neighborhood watering hole, Ivory Coast Bistro, in 2012, Matt and Laura Windisch drew upon Laura’s background as a chef to convert the restaurant into a full-service burger restaurant. Windisch traces its status as one of St. Louis’ most popular burger brands to the food, hospitality, and their determination to be present, hands-on operators. They look forward to keeping up that reputation, even as they expand to a second location. Their goal, Windisch says, is not only to create a successful restaurant but also be a vital part of their new neighborhood and build up other businesses.

“We have  a lot of cool businesses on this corner; there is something stuff for everyone down here,” says Windisch. “And we’re all so different that there really is no one fighting for the same category, which is really neat. Even if you don’t know what you want to do or where you want to go, come to the corner. Drink drinks, eat food, play games, have some ice cream. It’s a great time.”
