Founded “in the back of a Thai restaurant” ten years ago, Wyoming’s Melvin Brewing now has four brewpubs nationwide. The latest of those—and the first in the Midwest—opened in Eureka on June 21.
The Eureka location includes a full-service bar and restaurant in addition to the in-house brewing operation. The 12,700-square-foot space has seating for 276 customers, and it also includes a game room, private event space, an outdoor area with a firepit. In addition to supplying the brewpub itself, the Eureka brewery will produce beer for distribution to 15 states.

The brewpub has more than 20 draft beers on tap, with many of the names (examples including the “Killer Bees” blonde ale and the “Thaiger Style” IPA) reflecting the brewer’s fondness for kung fu movies and the music of the Wu-Tang Clan. Melvin’s beer lineup contains a number of year-rounders, but the brewery is also known for its Rotational Imperial IPA (RIIPA) series, a range of high-ABV brews that shifts seasonally through a variety of flavor profiles.

Melvin Brewing founder Jeremy Tofte’s started in the industry with Thai Me Up, the Thai restaurant he opened in 2000. That influence carried over into the brewpub’s food menu, which is centered around “Asian-inspired pub fare.”
Local construction firm Knoebel Construction was the contractor for the buildout of Melvin’s Eureka location, fashioning the new venue out of a site that formerly housed a restaurant, retail stores, and storage space.
