Gerard Craft and Lion’s Choice collaborate for new Crafted Braised Brisket Sandwich

A long-time Lion’s Choice fan, the James Beard Award-winning chef appreciates that a “fast-casual brand with 25 stores puts so much attention to detail and care into their food.”

Lion’s Choice can now add “slow-braised brisket” to its tagline of “real roasted beef.” For a limited time, anyway.

In a press release today, the St. Louis-based quick-service chain announced it’s collaborating with James Beard Award-winning chef Gerard Craft. The owner of Niche Food Group (Sardella, Pastaria, Taste, Brasserie, Porano Pasta) has worked with the roast beef sandwich chain to create the Crafted Braised Brisket Sandwich.

It features slow-braised brisket, pickled cabbage, Swiss cheese, spicy mayonnaise, and horseradish served on a brioche bun. The sandwich has been available since January 31, and will be on the menu for a limited time at all 25 locations. According to the release, this is the “first of several menu items to be developed for Lion’s Choice by chef Craft through 2018.”

Craft, already a fan of Lion’s Choice, said in a statement that when the chain’s team approached him about creating items for the menu, it was mutually beneficial.

“I could learn more about their impressive operation while lending my thoughts as a chef for a sandwich worthy of the Lion’s Choice name,” he said. “It’s impressive to see a fast-casual brand with 25 stores put so much attention to detail and care into their food.”

Mike Kupstas, CEO of Lion’s Choice, said in a statement it’s “an honor” to worked with Craft on the menu. 

“His attention to detail, insistence on high-quality ingredients and creativity are second to none,” he said. “The sandwich he created is sure to satisfy our longtime Lion’s Choice guests, and we look forward to welcoming fans of Gerard’s restaurants to any of our 25 St. Louis locations.”

The Crafted Braised Brisket sandwich is priced at $6.19.
