Right on the heels of Josh Allen closing his Companion cafe in the CWE (stories here and here), Chris Sommers, co-owner of Pi’s three pizzerias, today announced that, beginning February 1, Pi will begin serving coffee and pastries out of its CWE location. Sommers admitted he had been considering such a move but saw opportunity in Allen’s surprise announcement.
The plan is to have pastries and coffee delivered daily from 222 Artisan Bakery and Goshen Coffee,both located in Edwardsville, Il. Pi already serves Goshen’s “Pi Blend,” an organic coffee blended by Matt Herren, owner of both Goshen and 222. The breakfast pastries will be supplemented by creations from Pi’s own Matthew Rice and Anne Schuermann.
