“The Cake Lady” opens bakery inside Zanti’s Deli in South County

The Cake Lady, Cakes & Cobblers serves up 111 flavors of gooey butter cake and counting, as well as holiday treats.

A new bakery from a familiar face has opened inside Zanti’s Deli (181 Concord Plaza Shopping Center).

Robin Lieneke, known to many as “The Cake Lady,” has opened The Cake Lady, Cakes & Cobblers inside the deli.

The new counter features a rotating lineup of desserts, including a staggering 111 flavors of gooey butter cake, with most developed through years of experimentation. Lieneke also offers 10 varieties of gooey butter cobblers, six varieties of cheesecake, brownies, and specialty cakes. (See complete menu here.)

Lieneke’s creativity is at the center of her menu. “I decided to throw the box away a long time ago,” she says. The results are myriad flavors, including her personal favorite, the double chocolate bacon—a perfect combination of sweet and salty.

The menu continues to grow, often at the request of customers. “I love a challenge,” she says. “The last four flavors I added to the menu were because someone challenged me to do them.” Recent additions include a bananas foster gooey butter cobbler and a hot cocoa gooey butter cake, which will be available for the holidays.

Peanut butter gooey butter truffles

The Cake Lady, Cakes and Cobblers has several other holiday-only specials including three types of pumpkin gooey butter cake and gooey butter truffles, another recipe she developed herself.

“I call them amaze-balls because they are,” she says with a laugh.

All of the items are available for pre-order. Thanksgiving orders should be placed by November 22, with pickups available the following Tuesday and Wednesday.

Lieneke is excited to continue refining the offerings. “We stick with the things we do because we know we do them very well,” she says. She even jokes about one day bringing Guy Fieri back to St. Louis to taste her gooey butter cakes. “He needs to taste mine because they are better,” she quips. 

For now, though, Lieneke is excited about opening the bakery. “Sometimes in life, you get an opportunity to follow your dreams,” she says. “I would rather do it than wonder what would have happened if I had tried.”
