Panzanella tartine from rootberry
Rootberry, the St. Louis–based company serving ready-to-eat and ready-to-heat plant-based meals, has expanded its footprint at the Saint Louis Galleria with a ghost kitchen.
Launched in 2021, the company moved its headquarters to the former Weber Grill Restaurant space earlier this year. Now, rootberry’s ghost kitchen is serving up a menu of hot and cold dishes, with both old favorites and new offerings. Open from 10 a.m.–3 p.m. Monday through Friday, the ghost kitchen is available for delivery via GrubHub or DoorDash.
There are also future plans for guests to order for self pickup. And according to a press release, rootberry has plans for a larger-format catering menu and potentially launching its own full-service, 100 percent plant-based restaurant.
Here's a look at several of the offerings from the ghost kitchen:

If you’re looking for a sandwich option, the Bahn Mi (pictured above) is made with Union Loafer’s hoagie, an assortment of vegetables (red char siu beets, carrots, cucumbers, and more), and sweet and sour vinaigrette.
The Spicy Bulgogi Bowl (lead image above) offers a vegetarian twist, made with eggplant, cremini mushrooms, kimchi, edamame, pickled cucumber, carrots, and cauliflower fried rice.
Seasonal specials include the Summer Poke Bowl, filled with marinated watermelon, hemp seed furikake, kimchi, daikon sprouts, and other ingredients often found in sushi rolls.
