There are few things better than a crispy fry dipped in your favorite sauce. No need to hit up the nearest fast-food joint. You can make them right in your own oven. If you have extra time, soak the cut potatoes in cold water for at least 30 minutes, and lay out to dry prior to baking.

- 3-4 medium russet or yellow potatoes
- 2 tablespoons olive oil
- 3/4 teaspoon chili powder
- 1/4 teaspoon dried thyme
- 1/4 teaspoon garlic powder
- 1/8 teaspoon salt (more when fries are done baking, if desired)
- Few pinches of black pepper
Instructions:
1. Wash and cut potatoes into thin slices (about ¼-inch wide). If desired, let soak in cold water for about 30 minutes, then drain and pat dry.
2. Add cut potatoes to a large bowl, and coat with olive oil. Add the remaining ingredients, and toss to coat.
3. Place an oven-safe wire cooling rack on top of a sheet pan. Place the cut potatoes on the cooling rack and bake at 400 degrees for about 25–30 minutes or until fries are crispy. Be sure to leave about 1 inch between the fries. Use two sheet pans. If you don’t have a cooling rack, place the fries on parchment paper.
4. When the fries are done baking, sprinkle with more salt if needed.
5. Enjoy immediately with your favorite dipping sauce.
