New breakfast pop-up Biscuit Town debuts at Neon Greens in The Grove

In what owner Josh Smith describes as a “love letter to the American breakfast tradition,” Biscuit Town features signature sandwiches, hash browns, and sweet and savory biscuits. The pop-up is designed to match the quality and freshness of its host restaurant, Neon Greens (4176 Manchester). Here’s what to know before you go.

The inspiration for Biscuit Town came from the Neon Greens staff, who arrive at the restaurant to start prepping early in the day, when few breakfast places are open.

“We thought how good it would be to have a great breakfast sandwich or biscuit?” Smith recalls of the concept’s origins.

Smith gives credit for the biscuit recipe to Andy Hoch, assistant general manager at Neon Greens, who happens to have a pastry background. Of the biscuits, Smith says, “They’re flaky and incredibly buttery and soft, with a light crispy, crunchy exterior, which lends itself to sandwich form.” The team spent months developing and perfecting the sandwich combinations, inspired both by the Neon Greens menu and their own early-morning cravings.

In keeping with Neon Greens’ spirit of lively culinary combinations, the soft, buttery, flaky biscuits are not drenched with traditional gravy but instead filled with more unexpected options, such as jerk chicken and huevos rancheros. The Jerk Chicken Sausage sandwich features eggs, white Cheddar, jerk mayo, chicken sausage, peanuts, and pickled red onions. The Huevos Rancheros builds on the classic Mexican dish, with eggs, lime crema, ranchero sauce, cotija cheese, pickled red onions and jalapeños, avocado, and refried beans.

“It’s part of the DNA that flows through this whole restaurant group, to try to do fun and exciting things that we’re really passionate about and expose people to new ideas and new flavors,” Smith says.

For those craving familiar flavors to start the day, the Sneaky Biscuit is composed of eggs, white Cheddar, and bacon—and then ups the ante with hot honey butter and seasoned umami hashbrowns.

“We take something familiar, a fast-food-resembling breakfast hash brown, and add a concoction of 11 herbs and spices,” says Smith.” One of them is sumac, a tangy red spice common in Middle Eastern cooking that also grows in Missouri, which naturally appealed to us. There’s also pepper, some naturally derived MSG that we get from mushrooms, and the rest are a secret.”

Customers can also order the biscuits straight up or with a berry glaze. Likewise, the hash browns can be ordered a la carte as with either the umami spices or the Plain Jane Hash Browns version.

Rounding out the carb-heavy menu are international Lays potato chips—a mystery pick that fans of Neon Greens are already familiar with—and the Very Good Peanut Butter Cookie.

To drink, there’s local cold brew coffee, local kombucha, Mexican Coke, and Topo Chico Sparkling.

The Atmosphere

Biscuit Town was initially conceived as a ghost kitchen where customers would order online for delivery or pickup, but Smith now refers to it as a pop-up eatery. “I want people to be able to physically come in and enjoy the whole experience, not just give them a bag and send them on their way.”

Another factor was the building’s history: It previously housed Rise Coffee House. “Rise had been successful with their biscuit program, so it just made so much sense,” Smith says.

At 11 a.m. on Thursdays, Fridays, and Saturdays, the space seamlessly transitions into Neon Greens, which serves salads with house-grown lettuce and other hyper-fresh produce. Smith says there are plans to expand the days of operation and hours based on community response. The team is also considering adding seasonal menus that highlight local ingredients.

“We’re excited to become part of people’s morning routines and to continue evolving our offerings based on what our customers love most,” says Smith. “We have a lot of ideas for both expanding the menu and how it could expand beyond the menu.”
