1 cup buttermilk
2 cups sugar
2 cups all purpose flour
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon each ground clove, nutmeg, and allspice
1/2 teaspoon salt
Preheat oven to 325. Using a box grater, grate the peeled, cored apples. Squeeze the grated apples dry with a lint-free dish towel. In a large bowl, combine the apples, oil, eggs, buttermilk, and sugar and set aside. In a separate bowl, combine the flour, baking soda, cinnamon, spices, and salt. Using a rubber spatula, add the two mixtures and stir thoroughly. Rub a 9- by 13-inch baking pan with butter and dust it with flour. Pour cake batter into pan and bake at 325 until done, about 45 minutes to an hour. Serve with powdered sugar and freshly whipped (never canned) cream.
