When we last spoke with pastry chef Tyler Davis—who’s appeared on Food Network’s Halloween Baking Championship and worked at such restaurants as The Chocolate Pig, The Libertine, and Element—we knew he had a few things cooking. Since then, he’s expanded his business to three tiers:

• Alchemy Bakery, which specializes in artisan cakes, macarons, pastries, and chocolates.

• Sacred Geometry, in which the pastry chef creates food photography and art. “I’m much more interested in doing artistic mediums,” says Davis, who’s focusing on avant-garde pieces and is looking to make items to show in exhibitions. With a new artistic focus comes an overhauled website. “Since we are focused on art, we want everything to encompass that,” Davis says. Look for his creations in a coffee-table book set to release this fall.
• Æther, a consulting business that offers menu development, kitchen efficiency, pop-up and private dinners, and classes. The first class, on healthy eating, will be this Sunday, July 21, at Metropolitan Artists Lofts. (The class is sold out). After that, Æther is slated to host at least one class and one pop-up each month, starting in August. Davis is also working with a few restaurants and consulting. “I’m super happy that I’m able to use my skills to help these businesses out,” he says.
That seems to just be the beginning, though, teases Davis: “Stay tuned, because we have a lot of really cool and exciting things on the way.”
