- 2 Tbsp. olive oil
- 2 cloves garlic, finely chopped
- ½ white onion, finely diced
- 1 14.5-15 oz. can diced or crushed tomatoes
- 1 14.5-15 oz can of tomato sauce (if you don’t have tomato sauce, use another can of the diced/crushed tomatoes)
- ½ tsp. dried oregano
- ½ tsp. dried basil
- ½ tsp. salt (add more, as desired)
- ¼ tsp. ground pepper (add more, as desired)
- 1 pound box of pasta (Rigatoni pictured here)
- ½-1 cup shredded Mozzarella or Parmesan cheese, for topping
Instructions:
1. In a large saucepan, cook the diced garlic and onion in the olive oil over medium heat for about five minutes.
2. Add in the tomatoes, sauce, herbs, salt and pepper, and stir. Simmer for about 20 minutes while you cook the pasta.
3. Meanwhile, in a separate pan, cook the pasta on the stovetop according to the box directions. Rinse and drain. Add the cooked pasta to the large sauce pan, and stir with the sauce until well-coated. Taste and add more dried herbs and/or salt and pepper, if desired.
4. Enjoy topped with shredded Parmesan or shredded mozzarella cheese.
