First Watch opens new “concept” restaurant in Brentwood
The chain will serve brunch cocktails and other alcoholic drinks in the new space.

Breakfast chain First Watch opens a new location in Brentwood on Monday, August 26. The new location will take the restaurant’s tally of St. Louis area venues to 11, though diners can expect something a little different from this location.
First Watch is calling the new Brentwood location its first “concept” restaurant in St. Louis. So what does that mean? First of all, it’s bigger. While the average footprint of a First Watch restaurant is 3,300 square feet, the Brentwood location is significantly larger, at 4,430 square feet, with seating for 145 diners.
Notably, the new First Watch location will be the first in the region to serve alcohol, boosting the restaurant’s credentials as a brunch spot. In addition to classic brunch accompaniments, such as mimosas and Bloody Marys, the bar will offer signature cocktails, such as the vodka and kale tonic, an alcohol-enhanced riff on a long-time First Watch favorite. The drink selection is fleshed out with wine, beer, and kombucha on draft, alongside freshly pressed fruit juices. And, of course, if all you want is a coffee, you can expect the usual assortment of espresso drinks.

In terms of food, the new restaurant will stay true to the formula that has served other branches of First Watch. Expect to see trademark items, such as the Chickichanga and Quinoa Power Bowl, as well as traditional breakfast staples, including pancakes, omelets, and other egg-based dishes.
Maryland Heights’ Spiegelglass Construction did the buildout on the project, combining quartz countertops and warm blues with wood flooring and wooden tables and chairs. The result is a look informed both by urban and rustic aesthetics.
