Some people think sommeliers are full of hot air with their “bouquet” this and “freshly cut grass” that. But Copia, along with Randall’s Wine and Spirits, is finally making two of the city’s top sommeliers put their money where their mouth is in St. Louis’ first Sommelier Showdown.
The two contenders, Advanced Sommeliers Keith Herrick (of Bommarito Wines) and Andrey Ivanov (also a Rudd Scholar) will face off in three rounds of pairings. Each will have the opportunity to wow diners with their wine wisdom: Each course will be paired with two wines, one selected by each sommelier. And we’re not talking about easy-peasy pairings with chicken, beef, and fish either. The dishes, prepared by Copia’s chef Dave Rook, will test each man’s mettle. The first dish will be duck pot stickers with a Szuchan ginger glaze, followed by a recalcitrant vegetable dish of asparagus, polenta, and champagne cream sauce. Finally, the duo must pair wine to a dish of sea scallops accompanied by a jalapeno-potato cake with sweet corn relish. They certainly have their work cut out for them.
