Marshmallows, once a squishy afterthought, have muscled their way to the top of the confection chart in recent years. There hasn’t been this much marshmallow action since the Stay Puft Marshmallow Man lumbered into Ghostbusters.
The Elvis Fluffernutter Big Whoop
A triple-layer whoopie pie by Kaylen Wissinger at Whisk: A Sustainable Bakeshop, this old-school treat combines three banana cakes with house-made marshmallow fluff buttercream and peanut butter buttercream frosting.
Marshmallow Pies
It was the fave food of the rocking horse people in the Beatles’ “Lucy in the Sky With Diamonds” for a reason. At Kakao, vanilla bean marshmallows are embedded between layers of semisweet chocolate and toasted Missouri pecans. The chocolate sheets are then dusted with confectioner’s sugar.

The Rocky Road Marshmallow Cube
The cube-shaped dessert leads sales of marshmallow candies at Chocolate, Chocolate, Chocolate. “The secret is our supercreamy marshmallow center, made from a century-old recipe,” says Dan Abel Jr., a second-generation chocolatier. The milk chocolate jacket is dusted with roasted almonds.
