As summer rolls around, we all crave something light and cool to keep us refreshed from the heat. Snow cones, milkshakes, and ice cream are popular snacks, but I want something healthier. Normally, I make various fruit smoothies for my kids. When my daughter goes to the mall, she buys one of those protein-packed green drinks, usually containing kale and a variety of other fruits and veggies.
Healthy drinks, smoothies, and juicing have become the latest craze because it is an easy way to get many nutrients at once. Not only does this make a great pick-me-up snack, you could drink this as a quick breakfast.
There are so many variations; you will have to experiment! Start with a familiar base, then and add extra herbs, spices, or other exotic flavors later on. Most fruits and vegetables go together, so pick your favorites. Kale and apple, spinach and pineapple, and cucumber and avocado are just a few combinations that would make a good base. Herbs like parsley, mint, and basil are great additions. Ginger, cinnamon, and nutmeg other great spices to add to fruitier concoctions.
4 cups of baby kale mix (kale, spinach, Swiss chard, carrot—you can use whatever combination you like)
1 ripe avocado, peeled and pit removed
1 ripe mango, cut in big pieces
1 apple, cut in big pieces
Juice from two lemons
2 cups orange juice
1 cup apple juice
2 parsley springs
1 inch piece ginger, chopped
Put everything in a blender and blend until smooth. Add more juice if necessary for a thinner consistency.
For more a more protein-packed drink, replace the avocado with a cup of Greek yogurt, and add a few tablespoons of chia seeds. Drink immediately or refrigerate for up to two days.
Makes about 1 quart.
