Kalua Pork Sliders
Several years ago when we visited the Epcot Food and Wine Festival, I absolutely fell in love with this slider. In fact, I think the rest of the entourage was annoyed with me because I kept wanting to go back for more. The original recipe called for making the brioche and cooking the pork. This version has all the taste and hardly any of the work, which works perfectly for a St. Louis summer.
Yield: About 6 sliders
Pineapple Chutney
1 1/2 cups fresh pineapple, diced fairly small
1/4 cup packed brown sugar
3/4 cup red pepper, diced fairly small
2 teaspoons finely chopped fresh ginger
2 tablespoons vinegar
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
Combine all in a small saucepan; bring to a boil. Reduce the heat and simmer until most of the liquid is gone. Set aside. Cool to room temperature.
Chipotle Mayonnaise
3/4 cup mayonnaise
1 large canned chipotle in adobe sauce
1 teaspoon adobe sauce from can
Chop chipotle very, very fine. Combine all. Set aside; refrigerate for long storage.
Assembly
Slider Rolls-Kings Rolls are a good substitute for the brioche rolls that need to be made
1 pound pulled pork without sauce
Pineapple chutney
Chipotle mayonnaise
Spread the roll with the chipotle mayonnaise. Top with the pulled pork and the pineapple chutney.
