Korean Wrap
Food trucks are showing up everywhere. They are quick, unique, and fun. From good old hamburgers to some sort of exotic Asian fusion, food trucks are a good place to expand your food experience. Their versatility keeps them in style.
After watching Eat Street on the Cooking Channel, I became inspired from a Korean taco truck they featured on the show. You could choose your filling of bulgogi or kalbi, two very popular Korean grilled dishes, similar to Japanese teriyaki. Then there are a variety of Asian-flavored slaws and some secret sauces to top it all off.
I was craving Korean food, so I looked around my fridge and noticed that I had a Greek pita, pork loin, kimchi, and a spicy aioli. I quickly asked my children if they would be willing to try this Korean food-truck inspired wrap, and started marinating the sliced pork loin.
Korean Marinade
1 pound of pork loin, sliced into thin pieces
1/3 cup soy sauce
¼ cup apple juice
2 tablespoons sesame oil
2 tablespoons sugar
1 tablespoon grated ginger
2 garlic cloves, chopped
1 tablespoon sesame seeds
Mix all ingredients together in a shallow pan and marinate for at least an hour, preferably overnight. Keep it in the refrigerator until ready to use. Remove from marinate and cook on the skillet or grill until done. Cut the meat into bite sized pieces.
Assembling:
Buy your pita, kimchi, Japanese eel sauce, and spicy aioli (it’s really simple to make aioli. Take your favorite brand of mayonnaise and add as much or as little sriracha sauce as you’d like). Have thinly sliced cucumber, chopped green onions, and chopped cilantro ready.
Warm up the pita bread. Put the pork in the center of the pita and add everything else to your desire. Wrap and enjoy.
