1 cup unsalted butter (2 sticks), softened
1 cup packed brown sugar
1/3 cup granulated sugar
2 eggs
2 teaspoons vanilla
½ teaspoon baking soda
½ teaspoon salt
1 cup all purpose flour
2 ½ cup old fashioned oatmeal
1 ½ cups sweetened coconut
12 ounces milk chocolate chips
¾ cup pecans pieces
Preheat the oven to 375 degrees. Line baking sheets with parchment pepper. Set aside.
Cream the butter and both sugars until light and fluffy. Add the eggs and vanilla and beat until well combined. Combine the baking soda, salt, flour, and oatmeal. Add to the butter mixture, mixing until blended. Add the coconut, chocolate chips and pecans. Mix on low until combined.
Place ¼ cup of dough about 3 inches apart on the cookie sheets. Press them down to about ½ inch thick and bake in the middle of the oven for about 13 to 16 minutes. Cool.
