Toast thick slices of baguette. Spread each slice with soft goat cheese. Then top each with tomato basil relish (recipe below). Drizzle with balsamic syrup (recipe below). Shave reggiano over the top.
Tomato Basil Relish:
- 2 cups of the best quality tomatoes available, deseeded and diced
- ¼ cup fresh basil, finely julienned
- ¼ cup olive oil
- ½ teaspoon kosher salt
- ½ teaspoon fresh cracked black pepper
- ½ teaspoon fresh garlic, minced
Place in a bowl and toss.
Balsamic Syrup:
- 2 cups balsamic vinegar
Place in a small stainless saucepan over medium-low heat. Cook until the vinegar is reduced and measures ½ cup. (Do not over-reduce, or it will turn bitter.) Let cool and pour into a squeeze bottle. Refrigerate until just before ready to use.
