Pappy’s Smokehouse is trading cake for whiskey to mark its 15th birthday, celebrating with a mashup of sorts: a collaboration with local distillery StilL 630. Together, they’ve created MASH & ASH, a single-barrel straight bourbon whiskey.
“We started working on it back in the winter,” said John Matthews, co-owner of Pappy’s Smokehouse.
The product is local through and through, made with 100 percent Missouri-grown corn, aged in Missouri-sourced oak barrels, and mashed and distilled at StilL 630's distillery. It’s filtered with charred applewood from the smokers at Pappy’s to infuse a smoky undertone, ensuring it will pair well with a plate of the restaurant's award-winning barbecue.
According to Matthews, “I’ve managed to sample a little bit, and it’s some first-class sip swill!”
And the same rules that apply to Pappy’s barbecue extend to the bourbon: When it’s gone, it’s gone. The bourbon is available for purchase in limited quantity (254 bottles filled, to be exact) at the Midtown location of Pappy’s Smokehouse (3106 Olive) beginning at 11 a.m. on Wednesday, May 17. The 750-ml bottles cost $65 each, with a limit of two bottles per customer. But if this round is successful, Matthews teases, “We might just do it again next year.”
They will be celebrating a Sweet 16, after all.
