What could Jill Segal and Casey Shiller possibly do for an encore? Wait, we said the same thing two years ago.
First came Jilly’s Cupcake Bar & Café, followed by Shiller’s appearance (and victory) on Food Network’s Cupcake Wars, then a line of house-made ice creams with cupcake add-ins, followed by Jilly’s Ice Cream Bar, which opened in May 2014 (SLM's First Bite video is here).
Next up (and we should have guessed)—cupcakes with ice cream add-ins.
Beginning on April 15, four varieties of ice cream cupcakes will be available at Jilly’s Ice Cream Bar (608 N. McKnight, 314-993-JILLY), sold individually for $6.59 each, or in a variety 4-pack for $23.99.
Shiller says the ice cream stuffed cupcake is a natural progression. “We’re in both the cupcake and ice cream business,“ he says. “It was inevitable the two products would continue to evolve.” Then the business-speak stopped and the real Casey chimed in, way-enthusiastically describing the new item as “a multi-layer, multi-texture, multi-flavor, over-the-top, YUM-fest!” (Would somebody please give this guy his own TV show?)
Shiller, who’s also been the Executive Pastry Chef-Professor at St. Louis Community College for the last 13 years, explains that the cupcake is a larger version of a standard sized cupcake, but not as big as Jillys’ oversized versions, calling it “indulgent for one, but sharable…or maybe not.” He elaborates that the cupcake is topped with ice cream and then whipped topping, as the latter freezes well and has a better mouth feel than frozen buttercream.
Chef Shiller says to expect more flavor combinations throughout the summer. At present, the following varieties are available. Indulge and enjoy.
Turtle — Chocolate Cake Filled with Caramel and Pecans. Topped with Turtle Brownie Ice Cream and Iced with a Caramel Whipped Cream.
Kaboomm — Vanilla Cake Filled with Chocolate Ganache and Oreos. Topped with Kaboomm Ice Cream and Iced with Oreo Whipped Cream.
Neapolitan — Chocolate Cake Filled with Chocolate Ganache. Topped with Strawberry Ice Cream and Iced with Vanilla Whipped Cream.
Cuban Coffee — Coffee Chip Cake Filled with Caramel and Toffee Pieces. Topped with Cuban Coffee Ice Cream and Iced with Espresso Whipped Cream.
