Sometimes, food pairings truly prove that two is better than one. Here, two St. Louis taco chefs have whipped up a twist on a classic Cuban sandwich. Mission Taco Joint and Rock Star Taco Shack, which recently opened in New Town in St. Charles, have collaborated on "The Ricky Ricardo" taco.
That taco creation, priced at $3.75, is a sandwich-taco hybrid, with Cuban-roasted pork, griddled ham, habanero-agave mustard, pickled tomatillos, and grilled Swiss cheese melted right onto Mission Taco Joint’s house-made flour tortillas.
In St. Louis Magazine's August issue, chef/owner of Rock Star's Wil Pelly told SLM that he creates tacos with no traditional restrictions. "Tacos started out as strictly Mexican, but are no longer any limits, no need to feel like you have to be authentic," he said. "The taco has become a vehicle to simply get food into your face, just like pizza." His creation with Mission Taco's chef/co-owner Jason Tilford, seems to do just that.
Want to taste it for yourself? With a portion of its proceeds going to the American Heart Association, the masterpiece is available at all six Mission Taco Joint locations (including Kansas City) from September 4 until November 4.
