Two friends had long dreamed of opening a restaurant together—a gourmet burger joint, they originally thought—when one morning, Ryan Mangialardo, an admitted Seinfeld fan, woke up and uttered one word: “Calzones!” He called one of his soon-to-be business partners, who polished the concept and gave it a name: Sauce on the Side. It would prepare that one item “better than anybody else,” stuff it a number of creative ways, and serve each with its own dipping sauce. When the flagship store opened to rave reviews in 2012, myriad specials followed: the Don Corle-zone, the cheeseburger-inspired ’Murica, the Hot Mother Clucker… Then, in late July, the calzone craze hit Clayton, with the sister store opening on Forsyth Avenue. Should it take an upscale salad or a bottle of beer to get you primed for a ’zone, so be it; there are six and 60, respectively. And of course, homage was paid to Seinfeld: The first item on the menu—the Costanza—is a take on the pepperoni, eggplant, and cheese calzone that George immortalized on the sitcom’s 130th episode.
