Sometimes things just don’t work out—and sometimes they work out for the better. Case in point: Ben Bishop Jr.’s transitioning of the former Oceano Bistro into Bishop’s Post, a broader-market restaurant that doubles as a tribute to Chesterfield trailblazer Justus Post, who once owned the land that the restaurant occupies. Out of veteran chef Dave Rook’s deep bag of culinary tricks come treats like a chicken-fried-bacon BLT, gremolata-encrusted lamb lollipops, and a pork chop with Budweiser-and-bacon gravy. An equally big attraction is the 80-seat patio—part under sky, part under cover—that’s home to occasional live music and frequent backyard-style barbecue shindigs, all within sight and earshot of a landscaped waterfall, the finest in town (the same claim we reserve for Rook’s spicy seafood-and-andouille gumbo). On the days and eves when the weather gods smile, outdoor dining doesn’t get much better. We’re enthralled enough that we might just kiss the Bishop’s ring.
