Earthbound Beer is rolling out new Filipino fare in a pop-up series this year.
This year, the brewery's taproom (2724 Cherokee) will host The Fattened Caf, a Filipino barbecue concept from chef Charlene Lopez Young. Lopez Young and her team will cook new barbecue selections and create barbecue-and-beer pairings. Smoked longaniza, or Mexican sausage, and baked goods are among the items that guests can enjoy.
The first pop-up, January 31 from 6–9 p.m., will feature Filipino barbecue. A second event, February 16 from 11 a.m.–2 p.m., will feature a Filipino brunch. Also on the drawing board: a kamayan dinner, in which guests eat with their hands. All events are non-ticketed and open to the public.
The residency grew out of an idea that surfaced at an Earthbound staff retreat in December. The group brainstormed strategies for the next five years, and “the general consensus was ‘Live mas!” Stuart Keating, president of beer at Earthbound, said in a statement. “Basically 2019 was our weirdest and most active year to date, and we decided to just double down and see what happens. We're only getting better and weirder with age, like many cheeses.”
The pop-up series marks a new chapter for Earthbound, which has come a long way since unveiling its new space in the historic stock house of the former Cherokee Brewery. Earthbound recently expanded its event repertoire with a pop-up dinner led by veteran chef Grace Dinsmoor. In September, Dinsmoor and Earthbound hosted a Spanish-themed dinner, complete with sherry-based cocktails and sherry flights to complement the tapas.
“We love having up-and-coming chefs take over our kitchen,” said Kristina Goodwin, who runs the food operation at Earthbound. "It’s exciting to pair great food with great beer, and to have a party and the energy of collaboration."
