Chocolate Tuxedo donuts from Dough Joe's Saint Louis

Until now, Joe Orf, the man behind the forthcoming food truck Dough Joe’s Saint Louis, has only shared his sweet and savory doughnuts with his girlfriend, Lindsey, friends, and Aussie/border collie mix, Zula. Tonight, from 6–10 p.m., the rest of St. Louis gets a taste during a pop-up preview at Earthbound Beer (2724 Cherokee).
“It’s my first exposure to selling my donuts," says Orf. "My goal is to make it through the night in one piece.”
Orf plans to offer four of his original donuts onsite tonight:
Cherokee Meteor: This cake doughnut is baked to perfection and covered with an Earthbound Beer glaze.
Dutchtown Daddy (pictured at right): The classic old-fashioned doughnut is fried and drizzled in vanilla frosting and topped with crumbled Dad’s cookies.
Chocolate Tuxedo: The classic doughnut is smothered in Kakao chocolate frosting.
Doughsted Ravioli (pictured below): Four cheeses are encased in a circular ravioli, then breaded and deep fried.
Cardamom Black Tea Black Pepper Blonde from Earthbound Beer
Orf recommends pairing any of the sweet donuts with Earthbound’s dark, mild beers, such as the New World Porter or Chinese Five Spice. He suggests something snappier for the Toasted Rav: “I think Meteor IPA Blonde would be a good match.”
In developing his doughnuts, Orf has established extensive local sources for ingredients, including flours from The Mill @ Janie’s farm, Ozark Mountain Creamery, Dad’s Cookies, Brick River Cider, Earthbound Beer, and Kakao chocolate.
Drinks on the food truck will include local purveyors Coma Coffee, Big Heart Tea, and Fitz’s Root Beer. Orf is also working with Tamara Keefe to bring Clementine’s ice cream into the mix.
And he’s even collaborating with Treats Unleashed to offer a line of Tail Waggin’ Doggie Donuts (pictured at right)—a nice nod to Zula, who helped with all of the doughnut development.
