Coming soon to South St. Louis: DB Cooper’s Safe House.
The project, which plans to open in September, is the brainchild of Jared Gallagher, the son of Waterloo, Illinois restaurateur John Gallagher. Growing up in a family with experience in both the restaurant and construction business, it’s no surprise Jared's completely revamping the building at 6109 Gravois (most recently occupied by Mak’s Pub & Grub).
“We’re planning a large open-air bar and grill themed after D.B. Cooper,” Gallagher says. “We’ll have garage doors opening out to a large patio. The kitchen’s been expanded for a bar menu. As we see what the demand is here, we’ll develop menu items.”
Gallagher is planning ahead. “We bought the building next door, so we’ll have room to expand.” Alas, there will be no Gallagher’s delicious fried chicken, but Jared's got a great deal going on chicken wings.
“A huge billboard goes up in September with our big draw: 25-cent hot wings and $1 beers, all day, every day,” he says.
Although Gallagher was too busy with construction for a lengthy discussion about the bar and grill’s namesake, it won’t be hard to find D.B.’s hideout. “There will be a plane coming off the front of the restaurant,” he says.
