Simone Faure didn’t invent CAKEsicles, but the acclaimed pastry chef is taking them to new heights. The sweet treat was invented in Australia, home to the increasingly popular drip cake and outrageously indulgent Freakshake. The size of a Dove Bar, CAKEsicles are a pastry chef’s dream, a blank canvas for different cakes, icings, and toppings. Ranging from high fashion to boho, the sweet straddles the line between art and edible. Now a staple at Chouquette, CAKEsicles are sold individually (for $5), in boxes of three ($15), and in sky’s-the-limit custom orders. The theme for April: Alice in Wonderland, meaning bright colors and filigree Mad Hatters, clock gears, looking glasses, keys, and more. “It’s perfect because ‘We’re all mad here,”’ Faure says with a laugh.
