BEAST Butcher & Block has just announced the launch of a new Nose to Tail Brunch, starting September 15.
Billed as a “live fire brunch buffet,” the menu will feature a range of “nose to tail” cuts of meat and omelets cooked over hot coals, in addition to more classic fare. Brunch will be served every Sunday from 10 a.m.–2 p.m.
Dishes with such names as “briskets and gravy” certainly hint at a barbecue-inspired spin on the average brunch menu. BEAST will also be serving up sausages and bacon made in-house, waffles, and a mix of barbecue and brunch favorites.
The brunch menu will be cooked and served buffet-style in The Skullery, the 36-seat room that BEAST uses as a reservations-only space for menus that are different from the main restaurant. When BEAST Butcher & Block opened in The Grove in June, dining editor George Mahe described The Skullery as '“a cross between a chef’s table and a research-and-development–style kitchen.' BEAST co-owner and lead pitmaster David Sandusky simply refers to it as 'our playground.”'
Although a number of brunch slots will be held for walk-in diners, seating will be limited. Sandusky recommends booking tickets in advance at beastbbqstl.com. Tickets are $29 for adults and $15 for kids under age 12. Bottomless mimosas, Bloody Marys, and draft beers will be available for an additional $15 at the door.
BEAST’s main barbecue restaurant and adjoining butcher shop will also be open during brunch hours. “Cooking brunch in the Skullery is going to take breakfast to another level,” Sandusky said in a statement. “We want to put our one-of-a-kind stamp on brunch, giving people a new experience that reconnects us with primal cooking.”
