If chocolate is your religion, you might plan on taking communion at Tony Cole's Chocolate Factory, a demonstration class at Vin de Set on May 11. The Chocolate Factory is one of several classes in their Grand Petite Marketing Culinary Series.
Cole, the Executive Chef at Moulin and the Malt House Cellar, will whip up a five-course meal for chocolate lovers that will feature:
-Chocolate-dipped, applewood-smoked bacon
-Mesclun salad with chocolate pecans, sweet bell peppers, fried goat cheese, and white balsamic vinaigrette
-Pan-seared sea bass with mole sauce
-Braised short ribs in a chocolate-stout reduction
-Fresh berries with white-chocolate sabayon
Cole said that pairing "the mild flakiness of the sea bass with the bold, robust smokiness of the mole sauce" is his own innovation, and works well.
The recipes utilize ingredients from Vin de Set's Grand Petite Market, and each course is paired with wine or beer, each of which is also available at the Market, he added. The cost for the class is $45 per person, and complete details are here.
