Corks are popping at Pi this weekend with their introduction of the region's first green wine list. According to Pi's owners, it may even be the first wine list in the country devoted exclusively to sustainable, organic and/or biodynamic wines.
Not surprisingly, the 25 bottle selection zeroes in on pizza-friendly wines (the majority being red) and wisely makes most available by the glass. There's practical information on the list as well, including pizza pairings, exactly what constitutes a green wine and which wines follow each practice. According to owner Chris Sommers, the new list "fully captures what we are all about."
Pi, already one of the local restaurant success stories for 2008, was further bolstered by a superlative recommendation (of a Chicagoan, no less) last Fall. (See story #2 here.)
What's next for the greenest restaurant in town? Driving the overindulgent home in a Prius? Delivering pizza by electric car? Or electric scooter? Wouldn't surprise us...Pi produces a quality product and is very committed about how they go about it. -- George Mahe
