At the end of this month, from the 25th through the 29th, Scape American Bistro in the Central West End will be running a three-course prix-fixe menu “celebrating the versatility of one single ingredient”: yuzu (left).
Don’t know what yuzu is? We didn’t either, so we turned to Google and found it called “strange” and “bold,” learned that it’s “exclusively used for its aromatic rind,” and read that we’re in for “a delightful surprise” upon first trying it.
What better way to discover the East Asian citrus fruit than in the talented hands of Executive Chef Eric Kelly, who has a background in Pacific Rim cuisine and worked with Roy Yamaguchi, Sam Choy, and Dutch O’Neal?
The yuzu menu is below. At $42 a guest, with suggested $5 wine pairings per course, this is a great opportunity to stretch one’s palate in a swanky setting. Maybe the St. Louis weather will cooperate, and Scape’s outside seating will be available. Then again, after this winter, we don’t want to make any predictions. We can be sure, however, that the food will be superb.
The yuzu dinner is the third in a monthly series of single-ingredient menus (following "anchovy" and "balsamic"), so look for more in the upcoming months. "Jalapeño" is the featured ingredient in April.
