The underrated pleasure of matching red wine with chocolate has been cranked up a couple of notches by two local producers. And we're not talking wineries, either. These are for chocolate lovers who like crunch and really enjoy the sweet-salty combination. If that sounds strange, think about any of the peanut-chocolate candy bars, or perhaps a Payday bar during that brief period a few years ago when it could be had enrobed in chocolate.
But this is Serious Chocolate, not the Hershey's usual. Companion has introduced Breaded Bliss. Small cubes of Pain Beaucaire are toasted until crisp, then covered with a generous pour of Chocolate Chocolate Chocolate's dark chocolate, the whole thing seasoned with just a little sea salt. The thick tiles shatter handsomely when they're broken, perfect for snacking and certain to disappear rapidly at a wine tasting. Available at Dierbergs and Whole Foods.
A smaller, artisanal producer is Little Dipper Chocolate. We found them this summer at the Clayton Farmer's Market, where they sell [sold] what they call Bread and Chocolate. A thin slice of a Companion baguette is brushed with olive oil and toasted to a full crunch, brushed lightly with honey, then partially dipped in a thick coat of dark chocolate. A light sprinkle of coarse sea salt sets things off. Each good-sized slice is $3. Little Dipper Chocolates can be found at Local Harvest Grocery or at the CFM until it closes on November 5.
Wine, of course, isn't necessary for enjoyment. But if you're in the mood, try a Missouri Norton. A great combination.
