There are a few foods that are considered quintessential Super Bowl foods: buffalo wings with blue cheese dip, tortillas chips with salsa or guacamole, and other kinds of finger foods.
At my house, nachos supreme is that something my guys love. It never fails to please the men year after year. They might not get tired of eating it, but I have to admit I get tired of making it. I want something challenging and new. Can I twist it up a bit, I would ask? My husband and son would give a look of “If it ain’t broke, don't fix it.”
After some cajoling, my men agreed to trust me enough to try. Guess what, they were happily surprised. Here is how my nachos supreme is put together: Layer chips and cover with Monterey jack and cheddar, pepper jack or Mexican style cheese. Melt in microwave for 30-45 seconds. Top with warm taco meat mixture and your favorite salsa. Voila! It’s couldn’t be easier. I often make the taco meat extra to freeze for after use.
Now to my easy spicy Asian version—everything is the same except the topping. I also garnish with chopped cilantro and green onion.

Spicy Asian Nachos
Spicy ground beef topping
3 tbsp canola oil
1 lb ground beef
2-4 tbsp red curry paste, depending on how spicy you want it
2 tbsp soy sauce
1 tsp sugar
2 tbsp thinly sliced kaffir lime leaves
Heat oil in a skillet over medium-high heat. Add curry paste and beef, mix well. Cook until done, about 8 to 10 minutes, stir in soy sauce and sugar, cook for a couple more minutes. Add kaffir lime leaves, mixing well. Turn off heat.
This dish is equally delicious over rice!
