We all know that Cinco de Mayo is this Sunday. If you are looking for a quick, easy recipe to serve, look no further. Fajitas are the perfect entertaining food—simple to make, easy to assemble, and always delicious.
My basic recipe can be made with chicken or steak and does not need a lot of prep time. To serve four people, you will need two average boneless chicken breasts sliced, two sliced peppers (colors or your choice, but I usually do red and orange), and one red onion. The marinade is simply one part Soy Vay Veri Veri Teriyaki Sauce (Trader Joe’s has a similar product which you can use instead) and one part freshly squeezed lime juice. You will only need to marinate for 15 to 30 minutes.
Once marinated, use tongs to transfer the meat and vegetables on to a preheated, heavy indoor grill pan or cast-iron skillet. Sauté until the meat is just done and the peppers and onions are soft. Take care not to overcook the meat—it will dry out quickly.
These are best served buffet-style so they can be topped as desired. Begin the buffet with warm flour tortillas. The meat should be second, followed by cheese, pico de gallo, guacamole, and sour cream. Remember to fill the fajitas slightly toward the side and do not overfill. They will fall apart if overstuffed or will be difficult to roll if everything is placed in the center. Be sure to have plenty of napkins on hand—these are messy, but delicious.
