| Description: | Why is it that even otherwise imaginative restaurants reach the dessert course and fall back on formula? We do not need another brownie à la mode, however glam its drizzled sauce might look. At Atlas Restaurant, the desserts’ joy is their freshness: In July, you might find a grape-fruit tart; in fall, a butterscotch pudding with candied pecans. The almost flourless (these people are capable of subtlety) chocolate cake is paired with malted-milk ice cream. Lemon pudding cake gets tarted up with rhubarb compote. Bread pudding is studded not with raisins but with huckleberries and topped with buttermilk ice cream, not crème anglaise. And always, always, you will find a marjolaine, layers of hazelnut and almond meringue with crème fraîche and dark chocolate. It was a house specialty at Le Piano Zinc in San Francisco, where Atlas’ chef-owners were working when they fell in love—and love keeps things fresh. |
